K's Kreole Smoked Sausage Creole

Serves: 5–6 people

Ingredients

  • 1 box smoked sausage of your choice(Richard's or Savoie's Mild Smoked Sausage)
  • 3 (6-ounce) cans tomato paste
  • 2 green bell peppers, diced 
  • red bell pepper, diced
  • 1 large onion, diced
  • 1 bunch green onions, chopped
  • 1 bunch fresh parsley, chopped
  • 1 whole bulb garlic, minced
  • 1–2 tablespoons olive oil (if needed)
  • 1 tablespoon butter (optional) 
  • About 3 cups water 
  • K's Kreole Seasoning, to taste 
  • 1–2 tablespoons sugar or to taste  
  • Hot cooked rice (Jasmine rice is recommended) 

 

Directions

  1. Slice the smoked sausage into bite-sized pieces.
  2. Heat a large pot or skillet over medium heat. Add the sausage and cook until lightly browned. If the sausage doesn't release much oil, add 1–2 tablespoons of olive oil or desired amount.  Stir in 1 tablespoon of butter if desired for extra flavor.
  3. Add the diced onion, green peppers, red pepper, garlic, green onions, and parsley. Cook for about 5–7 minutes, stirring often, until the vegetables are soft.
  4. Stir in the tomato paste until everything is well mixed.
  5. Slowly add about 3 cups of water and stir until the tomato paste is smooth.
  6. Season with K's Kreole Seasoning to taste.
  7. Stir in 1–2 tablespoons of sugar to help balance the acidity of the tomato paste.
  8. Reduce the heat to low or medium-low. Cover and let simmer for 40–45 minutes, stirring occasionally.
  9. Taste and adjust the seasoning and or sugar if needed.
  10. Serve hot over cooked Jasmine rice or your favorite rice.

Tip: This dish tastes even better the next day after the flavors have had time to blend together.
